In order to make a connection with the events that took place in the 17th century at Quinta do Gradil, we suggest our SO2 free, an Oenologist's experience. A time when people made their living by tilling the soil and growing crops. Wine was natural, very close to the current definition: fermented grape must. There was no technology, no added sulphites, no addition of yeasts, vitamins, enzymes, acidification or correction. It was just a reflection of the equation: year, climate, soil, environment and man. Reverso is a reverse wine, a limited edition of Quinta do Gradil that put itself in the position of testing another way of vinification and bottling without the application of sulphurous anhydride.
