Winemaking
Pre-fermentative maceration for 48 hours, followed by alcoholic fermentation for 8 days in tapered vats at a temperature of 25ºC. The aging took place in French oak barrels of 225 and 300 liters for 12 months.
Viticulture
For the production of this wine, the best portion of Alicante Bouschet from Quinta do Gradil was chosen. After a rigorous monitoring of the ripening of the grapes, the harvest took place in the last week of September. The grapes were hand-harvested to 15 kg boxes and sent to our Adega de Charme, where they were destemmed, as well as the berries to be used in fermentation. The grapes were fermented in 500-liter French Oak barrels and 2,000 kg stainless steel vats for 9 days. After fermentation, the wine was transferred to 225-liter French Oak barrels where it aged for 18 months. After bottling, it aged in bottles for 3 years before being placed on the market.
