Shrimp Tacos
Buy wrap dough and cut as you wish. Fry in very hot oil, 5 seconds. Mix red and white cabbage and tomato, add apple cider vinegar and mayonnaise. Cook the prawns and add mango chutney and mayonnaise. Finally, place the tobiko eggs on top.

Octopus salad
Cook the octopus and then fry it. Caramelize the nuts. Fry the artichoke hearts and chop the dried tomato. Place the arugula, octopus and the rest of the ingredients on the plate and cover with citrus vinaigrette.

Cod risotto
Sauté the clams and half the cod in garlic oil and cilantro. Make the risotto and, when placing the cheese (final), add the cod and the clams. The other half of the cod loin is fried immediately so that the skin is crispy and is served over the risotto.

Turkey Leg with Old Mustard and Rosemary
Leave the turkey leg to marinate in white wine, mustard and rosemary. Remove it from the marinade and put it in the oven with an old mustard layer. Cover with aluminum foil and bake. When it is almost cooked, remove the aluminum and leave it in the oven to get a crust.

Stewed Duck Cannelloni
Make an onion and garlic saute. Place the duck with bone in the stew and add half a bottle of red wine and let it cook. Shred the duck. Thicken the sauce with cornstarch and mix everything. Stuff the Cannellonis with the béchamel, put the grated cheese and put it in the oven.

Chocolate brownie with caramelized caramel
Make the Chocolate Brownie with nuts. Prepare the salted caramel, with the sugar in a frying pan over low heat. When it starts to caramelize, add the butter, salt and cream. Mix everything and cover the Chocolate Brownie before cooling.

Stewed Kid
Let the kid marinate in Quinta do Gradil red wine, salt and bay leaves. Remove the kid from the marinade, dry and fry. Make a stew with onion, tomato and garlic and add the kid. Allow to stew. When cool, remove the fat layer on top and serve immediately.
